It’s Day 3 of the #SeptemberWhole30 and I’m tingling all the taste buds with this Sweet Potato Shepherds Pie! If there’s been a staple item in my diet since I’ve started my Clean Eating Journey a few years ago, this Shepherds Pie is definitely it! It was one of the 1st recipes I attempted since it’s nearly impossible for anyone to mess up and I’ve kept it around ever since.
I’ve tried all sorts of different variations, but there’s something about the Savory Beef Filling & Sweet Potato topping that earned this variation a laminated spot in my Eat Clean Queen recipe binder. 🍗🍠 Hidden Veggie Chicken Nuggets (Whole30, Paleo) 🍠🍗
In a World so divided, I think one thing everyone can agree on is that Chicken Nuggets are THE BEST! Whether you prefer nuggets, tenders, or patties, I don’t think I’ve ever met a person who doesn’t enjoy Chicken Nuggets to some extent. They even offer plant-based nuggets for Vegans so everybody can get in on the “Chickie Nugget” goodness! Luckily, on the Whole30, we still get to enjoy Chicken Nuggets, and there’s a ton of different ways to make them!
This Chicken Nugget recipe is super simple and sneaks some veggies into one of everyone’s favorite comfort foods. I’ve used Russet Potatoes in the past, but I prefer to go with Sweet Potatoes because they’re nutrient dense and hold together very well. These nuggets also make an AMAZING meal prep item, and can be ready to go in 30 seconds from the microwave. It’s like having fast food on hand but with a healthy twist! I suppose you could also make these nuggets with another dense veggie like carrots, but I’d avoid watery produce items like zucchini or squash as they may effect the consistency of the nuggets. This one is for all of my Mint Chocolate Chip Lovers! It’s officially Day 1 of the #SeptemberWhole30 and I’m kicking it off with a Smoothie recipe that I sip on at least 3-4 times a week! I’ve posted this recipe once before, but I’m reposting to stress how important it is to freeze the your produce first to ensure a creamy, flavorful Smoothie! I’ve made Smoothies using room temperature or refrigerated fruit in the past, but I always had to add ice to get a smoothie consistency which totally diluted the flavor. By freezing the fruit & veggies first, you don’t have to add any ice whatsoever, giving you the most flavorful Smoothie possible!
I prepare my “Smoothie Packs” in advance for the week so I can just pop them out of the freezer and blend when I’m ready to go! It only takes about 5 minutes of prep and makes for a super quick and nutritious breakfast. Just freeze your Spinach and Banana in a small ziploc bag together overnight, add all of your other ingredients to the blender in the morning, pop in one of your Smoothie Packs and blend!

I know I said yesterday was going to be my last Paleo post for a month but...I lied🤷🏼♀️ I had a craving for Chicken & Waffles that had to be cured before Maple Syrup & Breakfast Baked Goods are gone for 30 days! The Chicken Tender recipe is actually Whole30 compliant, so feel free to use that if you’re taking part in the #SeptemberWhole30! They’ve got a bit of a kick to them and go perfectly with the sweet Maple Syrup. The whole meal took less than 25 minutes to put together, so it’s perfect for when you’re looking for some clean comfort food and don’t feed like spending a lot of time in the kitchen!

🍗🌶🍭🍚 Sweet Asian Chili Chicken Thighs w/ Fried Cauliflower Rice 🍚🍭🌶🍗
Take out the bad stuff from take-out with this Asian Inspired Chicken Thigh dish! The sweet Honey and spicy Chili marinade compliment each other so well and create that signature Asian “sweet heat” flavor we all know and love. Simply throw your Chicken Thighs in the broiler for just a few minutes after cooking to get that glazed dark red crisp on top! Pair them with a side of my veggie packed Fried Cauliflower Rice to make it a full meal that everyone will love!
I love to use this dish for meal preps during the week as it holds up extremely well, taste incredible, and is so easy to make! 🐱🍪 Sugar Kitties (Vegan & Paleo) 🍪🐱
This past week has had me extra motivated to use up the last of the sweets in the house, knowing the #SeptemberWhole30 is almost here! I’ve gotten rid of almost everything, but I had a little remaining Coconut Sugar and decided to whip these Sugar Cookie Kitties up! I just so happened to have a Hello Kitty Cookie Cutter on hand, but feel free to make these into any shape you’d like! I cut a few calories and skipped the Icing, but you could totally mix together some Coconut Cream with a little Maple Syrup to give these Hello Kitties a perfect white coat! I used Raisins for her Bow and melted Hu Kitchen Gems for the whiskers & eyes to keep the toppings Paleo compliant. I even zested a lemon for her little nose! The best part is, these cookies are completely Dairy, Soy, Gluten, & Refined Sugar Free!

🍫 Chocolate Chunk Trail Mix Bars (Vegan & Paleo) 🍫
Sweet..Salty..CrUncHy..CHOCOLATEY! If that got your attention, then you are going to LOVE these Chocolate Chunk Trail Mix Bars that I have been OBSESSED with! My boyfriend and I have each eaten 2 a day for the past month, and honestly don’t know how we’re going to cope without them when we start our #SeptemberWhole30 next week. This will be my last batch for a month so give them a go ASAP and let their legacy live on! I’ve used Almonds in the past, but found they were tougher to bite through and hurt some peoples teeth, so I switched completely to Cashews & Pecans to ensure these Bars will cure your sweet tooth and not crack it🦷
I’ve also incorporated Go Raw’s Mixed Seeds which are not only super healthy, but they’re also pre-salted, giving you the perfect amount of sea salt to balance out the sweetness! You could use Figs or Dates (cut up fine) in place of the Raisins, but I found the Raisins added the perfect amount of sweet and were the least amount of work! I’ve also used Hu Kitchen’s Crunchy Mint Bar instead of the Chocolate Gems in a pinch which completely switched up the flavor in itself! There’s SO MANY variations possible for these bars, so give them a try and see what you come up with!

Pizza is definitely one of my favorite foods, but not the way you’re thinking! I love combining different toppings with hints of savory & sweet ingredients to create the ultimate flavor festival in my mouth! From Breakfast Pizza to PB&J Pies, the options are endless if you’re willing to get creative in the kitchen!
This Balsamic Bacon Fig Pizza was without a doubt my favorite creation to date! The saltiness from the Crispy Bacon paired so INCREDIBLY with the Caramelized Onions and soft, sweet Fig, I didn’t want it to end🤤 (I definitely should have made 2). Top that off with some Balsamic Glaze, a drizzle of The New Primal Ranch, and you’ve just created a piece of Culinary Heaven! I cooked my UnBun crust at the highest recommend temperature which gave it the PERFECT amount of crisp and crunch. This Paleo Pizza Pie is also Gluten, Dairy, Soy, & Refined Sugar Free.
To be completely honest, I don’t typically enjoy the traditional “sauce & cheese” pizza all that much anymore🤷🏼♀️, and let’s be real...why be Basic when you can be Balsamic?🤭

To Hell with the Shell! This Beef Taco Bake is going to change the way you do #TacoTuesday! Yesterday afternoon, I was feeling extra creative in the kitchen and whipped up this Mexican Inspired Lasagna/Shepherd’s Pie hybrid! First, I created a “crust” using a Cauliflower Rice and Egg mixture. I topped the cauli-crust using Ground Beef, Salsa, Veggies, & Spices, then I smothered it in a layer of Nacho “Cheez”! I didn’t stop there, I layered everything one more time, topped it with some Fresh Jalapeños and Forager Project Dairy Free Sour Cream and haven’t been the same ever since. This is definitely one of the best dishes that I’ve created, but I’m a taco lover so I may be a little biased!

Potato Salad is one of my favorite Summer foods, but it tends to get pretty fattening after adding the mayonnaise, bacon, eggs, etc. This Super Simple Potato Salad ditches all those ingredients but still packs a lot of punch!🥊 The potatoes absorb the red wine vinaigrette so nicely, each bite had its own little burst of flavor! I made this last week as a side dish to go with my Turk-ini Lasagna,, but you could totally just mix a protein in and have it as a meal! 😋 Fig Newt-Thin 😋
Take the packaged Fig Newtons off your Grocery List, you won’t need them anymore! I looked at the ingredients for every variety of Fig Newton (Regular, Fat Free, No High Fructose Corn Syrup, Whole Wheat, Fruit Thins, etc.) and realized they’re all filled with Gluten, Soy, & Refined Sugar (even the “No High Fructose Corn Syrup” packs). I don’t know who I thought I was, but I decided to get extra creative in the kitchen yesterday and make my own! My first attempt went...awful The dough I made was too mushy for a rolled out bakery item, so I started again from scratch. The Fig Newton Gods must have been with me because on my 2nd attempt, I can confidently say, the cookies came out better than actual Fig Newtons! The crust is flaky, yet still soft, almost identical to (but legit better than) an actual Fig Newton! The Orange juice gives them such a fresh flavor, they taste like you literally picked them off a Fig Newton tree! I stepped mine up a bit more and double stuffed them because I never remember there being enough filling (and I was right)! My boyfriend Jimmy was genuinely shocked by how delicious they were and ate about 7 to himself last night! He even admitted he “thought they were going to end in a fail” and couldn’t believe how they turned out once I presented him the finished product! The best part is, they’re completely Vegan, Paleo Friendly and free from Gluten, Refined Sugar, & Soy!

🧄Garlic Cauliflower Hummus🧄
I’ll be in the kitchen all day today, so I whipped up this Garlic Cauliflower Hummus last night to give me something healthy to snack on while I cook! When I first started making this recipe, it was always for the beach, but now it’s became one of those things that we constantly have to have in the fridge! It has just the right amount of kick from the garlic, and the consistency of the tahini makes everything feel very smooth and creamy! I’ve also included the option to add a small russet potato in addition to the Cauliflower! It makes the hummus a bit heartier and feel more like a meal than a snack, but it’s totally up to you!
My boyfriend Jimmy likes his with Cassava Strips or Grain Free Tortilla Chips, but if you’re looking for an even healthier option, carrots are always my go-to🥕 This hummus can be stored in the fridge for 5-7 days and is a great healthy snack option to have on hand! Prior to Quarantine, I was fortunate enough to be working Drag Brunch every weekend at different venues throughout the area! In addition to the great food and incredible audiences, I pretty much always had access to a Mimosa! I’ve tried quite a few variations and definitely had some incredible ones, but I think the recipe my boyfriend Jimmy Boone put together is at the top of the list! It’s tropical and fruity, yet still very light (and low calorie, 153cals each)! Infusing the Vodka with Pineapple first took away any bitterness to ensure you don’t “taste the alcohol” and the Orange Mango fruit juice he used added the PERFECT amount of sweetness to the Prosecco, making for one hell of a drink! I had 4 of these last night and can vouch that they are not only delicious, but VERY effective🤪
